Old vine Cabernet Sauvignon from immaculately farmed Seven Hills Vineyard in Walla Walla, WA. The grapes were fermented as partial whole cluster in an effort to balance the naturally lush Walla Walla fruit with a more restrained, elegant structure. The wine was aged for 11 months in once-filled barrels and bottle unfined and unfiltered.
The wine has firm tannins balanced with bright blackcurrant fruit flavors. Pair this with a big steak. This will develop for several years in the cellar. I suggest you decant it for a good while if you drink it now.
