Old vine Cabernet Sauvignon from immaculately farmed Seven Hills Vineyard in Walla Walla, OR. The grapes were fermented as 100% whole cluster in an effort to balance the naturally lush Walla Walla fruit with a more restrained, elegant structure. The wine was aged for 11 months in once-filled barrels and bottle unfined and unfiltered.
The wine has firm tannins balanced with lush blackcurrant fruit flavors. This wine needs a big steak, and several years to age in the cellar. I suggest you decant it for a good while if you drink it now.
